Erin Davis was born on March 29, 1989. She trained at Capital Gymnastics in Austin, Texas.

In 2002, Erin competed level nine. She finished first on vault at Regionals. She placed third all-around. At Westerns, she finished 17th all-around. She moved up to level ten in 2004. Erin finished second on vault at the Spirit of the Flame Challenge. At Regionals, she finished first on vault and second on floor. Erin placed third on vault and 21st all-around at JO Nationals. Erin won vault at the 2005 Cancun Classic. At JO Nationals, she placed ninth on vault and floor. She finished 20th all-around. In 2006, Erin finished second on vault at Regionals. At JO Nationals, she placed third on vault, sixth on beam and second on floor.

As a freshman at Nebraska in 2008, Erin competed on vault and floor throughout the season. She continued competing on vault and floor in 2009. She finished first on vault at Nebraska. Erin also won vault at Michigan State. She earned All-Big 12 selection on vault. As a junior in 2010, Erin scored a perfect 10 on vault against Michigan and Illinois. She earned Big 12 Event Specialist of the Week for her performance. Erin won floor against Michigan. She won vault against Washington and at a tri meet with Oklahoma and TWU. She also won vault for the third straight Week at the Sweetheart meet. Erin earned her second Big 12 Event Specialist of the Week in March. At the Big 12 Championships, she won vault and earned All-Big 12 honors. She won vault at Regionals. During her senior season in 2011, Erin earned a spot on the All-Big 12 Academic Second-Team. She earned Big 12 Event Specialist of the Week five times. Erin was named Big 12 Event Specialist of the Year. SHe won vault and floor at the Big 12 Championships.
