Elizabeth Ellen Rizzo was born to Mary Ellen and Sal Rizzo on June 12, 1987. Her father wrestled for the College of New Jersey. She has a brother, Joe, who plays lacrosse at Western Illinois. She trained at Buffalo Grove Gymnastics Center under Teri Crumley and Tony Toms.
As a level 9 in 2002, she finished third all-around and first on floor at Easterns. She won the level nine state title in 2002. Beth then moved up to level ten. She red-shirted her freshman year at the University of Utah. She was an NACGC/W Scholastic All-American. As a sophomore, she began competing on floor. She competed on floor in eleven meets. She qualified to floor event finals after earning NCAA first-team All-American honors. She was also an NACGC Scholastic All-American. Beth competed on floor ten times and three times on vault as a junior. She won floor once. She made the Athletics Director's Honor Roll. She earned a scholarship for the 2009 season. She was recognized as a Mountain West Conference Scholar Athlete. She missed the 2009 NCAA Nationals because of an injury.
